Low-Carb Twice Baked Cauliflower

1 large head cauliflower
4 oz cream cheese, cut into cubes
1/2 c sour cream
1/4 c minced green onions
1/4 c freshly grated parmesan cheese
6 slices (more!) bacon cooked crisp and crumbled
1 c shredded cheddar cheese

Preheat oven to 350 degrees, spray glass 1.5 quart casserole dish with non stick spray

Cut out stem and core from cauliflower, and cut into small pieces.  Cook in pot of boiling salted water until tender but not over soft (5-7 minutes). Drain well and mash, leaving some chunks.

While cauliflower is cooking, prepare rest of ingredients.  Mix into mashed cauliflower.

Spread evenly in casserole dish. 

Bake 25-30 minutes.  Serve hot.

Henry's Old Fashioned Meatloaf

1 1/2 lb burger
1/3 c BBQ sauce
1 egg white
1/2 c Italian bread crumbs
1/2 c (or more) onion, chopped
1 (or more) green pepper, finely chopped
1 t minced garlic
salt and pepper to taste

Spreading Sauce
1/2 c ketchup
2 T brown sugar
1 T worcestershire
1 t dijon mustard
Mix well
Make more for dipping

Heat oven to 350 degrees
Coat pan
Combine onion, green pepper, bbq sauce, garlic, salt and pepper
Add egg white
Add burger
Add bread crumbs
Combine and mix, put into pan

Spread sauce over mixture
Bake 1 hour
