Oreo Cheesecakes

Oreo Cheesecakes

3 (8 oz) pkg cream cheese, softened
3/4 c sugar
3 eggs
24 oreos

Place muffin liners in muffin tins. Set an oreo cookie on bottom of each muffin liner.  Beat together softened cream cheese and sugar until smooth.  Add eggs one at a time and mix until blended.  Spoon mixture over each cookie.  Bake until centers are almost set at 350 degrees for 15-20 minutes.  Cool completely then refrigerate one hour or overnite.

Drizzle with favorite toppings.

1 lb sausage, browned and drained
1 c frozen hash browns, thawed
8 oz crescent rolls
1/2 c cooked crumbled bacon
1/2 sliced canned mushrooms (very optional)
1/2 c sliced black olives (also very optional)
5 eggs scrambled with 1 T milk
1 c shredded mozzarella
1 c shredded cheddar
1/2 c parmesan
salt and pepper to taste

Press crescent roll dough into a cookie sheet or pizza pan to form a crust. top with all ingredients in order of the list. Bake 25-30 minutes at 375 degrees.  Tomatoes and artichokes may be substituted for other toppings.

Texas Caviar

1 can black beans
1 can kidney beans
1 can corn
1 cup chopped celery
1 small red onion, chopped
1 green pepper chopped
1 red pepper chopped
1/4 c jalapeno, or more to taste
Mix into bowl

3/4 c white vinegar
1 c sugar
Bring to boil and cool

Add 1/3 c oil

Pour over veggie mixture and stir, let cool
