Fiesta Corn Salad (Z)
2 (15 oz) cans whole kernel corn, drained
2 c grated cheddar cheese
1 c mayo
1 pkg (1 oz) taco seasoning
1/2 c green pepper
1/2 c red pepper
1/2 c chopped red onion
1 (10 oz) bag chili cheese corn chips, crushed
Stir all ingredients together, except chips, add right before serving
Note: sometimes I just use the whole red and green pepper
sometimes when I double the recipe I use shredded carrots instead of double cheese
